What are the different types of professional refrigerators and how do they work? We are talking about compressors, dimensions, capacities, consumptions and the types of professional refrigerators on the market.
Operation
How does a professional refrigerator work?
We have an compressor which compresses a refrigerant gas. This gas circulates inside the coils that we find on the back of the refrigerator. The compressed gas heats up and when it circulates in the serpentine condensation. It is no coincidence that these serpentines form what is called capacitor. The heat dissipates outside and the gas becomes fluid, cooling down. At this point, the fluid passes through a valve which reduces the pressure causing it to reach theevaporator. The evaporation process takes place inside the refrigerator, which is, in fact, the place to be cooled! Indeed, it is at this time that liquid refrigerant absorbs heat from inside and turns back into low-pressure gas and takes the compressor route, ready to restart the thermodynamic cycle.
Simplifying as much as possible, the heat is absorbed and carried outside, thus cooling the inside of the refrigerator.
Here's why it is It is essential that the air circulates around our professional refrigerator, to allow heat to dissipate without causing the engine to overheat. In modern professional refrigerators, the compressor and evaporator are smaller and this allows for greater internal capacity.
The most used refrigerant gases in Italy are R404 and R434 which, however, are very polluting. For this, a gas very ecological, R290. The downside is thehigh flammability and therefore needs more attention and safety. Ecology is measured in tons of carbon dioxide equivalent as decreed by the Fgas legislation.

The future of catering, especially for those businesses that need many refrigerators, are here refrigeration plants external with remote compressor. This would save space in the kitchen and have a single control unit with the possibility of a backup engine in the event of an emergency.
Dimensions, capacity and consumption of professional refrigerated cabinets
I professional refrigerators I am in stainless steel and have fairly standard dimensions: about 70cm wide, 80cm deep and 2m high. So, pay attention to the measurements of the doors of your premises! They cannot be disassembled and vertical transport is essential: refrigerators must travel upright because the refrigerant gas and the engine oil must absolutely not mix. If they happen to be transported horizontally, it is a good idea to let your refrigerator cabinet spend 24 hours in an upright position before putting it into operation.
The internal capacity is measured in liters. So read the label carefully! You will also find the specific energy certification for professional refrigerators which are generally very efficient and ensure a very convenient investment in terms of consumption.

How are professional refrigerators made?
Let's start with doors. There are so many possible combinations, it is up to the business manager to understand which is the best according to your needs. To have two doors it is definitely a great advantage because it allows you to divide the professional refrigerator depending on the products and to manage them more easily. It can also choose to have a fridge door and a freezer. This involves, however, two engines and therefore the costs will not be so low. If, on the other hand, you choose all fridge or all freezer, proportionally a two-door is more convenient than two singles.
There are also glass doors. A slightly more expensive option but certainly very comfortable to view the interior of the professional and high-impact refrigerator. Pay attention to the altitude! Indeed, glass could to blow up in the mountains above 1000 meters above sea level. You can have one put on additional valve, you need to know in the production of the piece.
Le internal grids they can be in stainless steel or coated in rilsan, for a longer duration and to eliminate the risk of rust.
Special refrigerators for pizza
An eye for the pizzerias. An excellent solution are the display cabinets in which to store the ingredients, equipped with trays with lids to keep them fresh and tidy.
For a slower leavening, however, we can choose a fridge table with chest of drawers in which to let the pizza dough rest. The fridge table is always made of stainless steel and very often includes a rear upstand to prevent food or other objects from falling into the space between the wall and the fridge, for greater order and cleanliness of the room. It can have a granite top with support for the ingredients cabinet.
