Description

The CHEF PIZZA INOX Celme is the professional julienne mozzarella cutter dedicated to pizzerias and restaurants with the need to cut mozzarella. Easy to use, ergonomic and quickly cleanable, it is the appliance suitable for catering.

The line consists of two different machines: one for dicing and a second for fraying. Thanks to our extensive line of discs you can get exactly the cut you want. Furthermore, with the CHEF PIZZA INOX for dicing it is also possible to fray the mozzarella. While with the CHEF PIZZA INOX for fraying it is possible to obtain only this type of cut. It is therefore a different mozzarella dicer.

For both the professional julienne mozzarella cutter and the dicer version, to obtain the best result, we recommend using the mozzarella loaf at a temperature between 0° and +4°. This, in fact, helps to exploit the capabilities of the machine.

Thanks to the complete line of discs, it is also possible to cut the vegetables intended for topping your pizzas. It is not continuous use in this case, it is intermittent and sporadic use. Otherwise it is better to get a dedicated machine, i.e. a real vegetable cutter.

The machine is then made according to the regulations CE for professional use.

Mozzarella shredder: how to use it?

  1. Prepare the mozzarella: make sure the mozzarella is ready to be processed and is compact, has little whey.
  2. Configure the machine: Follow the manufacturer's instructions to set up your mozzarella cutting or shredding machine. Make sure you enter the correct settings for the thickness and type of fraying you want.
  3. Feed mozzarella: place the pasta filata on the machine and start the shredding process. The machine will automatically perform cutting and fraying.
  4. Collect the final product: finally, take the shredded mozzarella produced by the machine. You can then use it however you like.
