Salts flavored with the professional dryer

Drying is a particular method of food preservation which allows to guarantee the preservation of food without adding preservatives and to maintain all the taste. Thanks to the drying it is possible to use fruit and vegetables all year round and keep seasonal products for a long time to prepare original and curious recipes.

A great way to store seasonal herbs or particular fruits is to prepare some flavored salt with the help of the dryer! Here are our favorite recipes.

Herbal salt

  • 400 grams of sea salt
  • 6 sprigs of rosemary
  • 6 sprigs of sage
  • 10 sprigs of thyme

These quantities are ideal for the preparation of about 4 jars of salt. To make it, just wash and dry the herbs, then put them in the dryer for 12-24 hours at 42 °. Once drying is complete, it is good to separate the leaves from the twigs and chop everything with a professional food processor. Once these steps have been completed, simply add the herbs to the salt and store the flavored salt in hermetically sealed jars.

This recipe can also be prepared with just one of the three herbs, depending on your taste, with the addition of a little pepper. Or with the addition of edible flowers for more particular tastes.

Salt flavored with lemon, ideal for seasoning fish

  • 2 untreated lemons
  • 400 grams of sea salt

Also in this case the recipe is ideal for 4 jars of salt, but if desired, the quantities can also be varied according to the size of the lemons.

Taking care to wash the lemons well, they must then be cut into slices of about half a cm and left to dry for 5 hours at about 50 °. Depending on the taste, the lemon can be dried only with the peel or only the pulp. Once ready, the lemons must be dried and mixed with salt.

A great way to reuse lemons is also to make a lemon powder to add to savory and sweet dishes. The drying process is the same, but care must be taken to use only the peel, which is then minced with a food processor. Avoid inserting the white part, because it is bitter, only the yellow part should be kept.

A good alternative for this lemon flavored salt is to also add slices of orange to the preparation, to make it even more intense.
